Roasted Peaches With Spinach, Goat Cheese, Balsamic Vinegar

Roasted Peaches

What you’ve gotta have:
1 ripe white peach
1 cup spinach
1 tablespoon olive oil
1 tablesspoon balsamic vinegar
goat cheese to your liking

What you’ve gotta do:
Preheat your oven to 400F. Rinse a fresh peach, and cut into 1/2 inch slices. Line a baking sheet with wax paper and lay out the slices. Put in to roast until edges brown a little.

Heat the olive oil in a small skillet at medium heat. Add the spinach and cover. Mix the leaves around for even wilting every minute or so until the spinach is wilted to your liking.

Plate the peach slices, top with spinach and garnish with goat cheese. Drizzle the balsamic over the cheese. Would also be great served with roasted nuts - walnuts or pecans.

The recipe makes one serving (or 2-3 if you’re serving as a side).
