What you've gotta have:
2 15oz. cans unsalted black beans
1 15oz. can corn kernels
What you've gotta do:
Bring the two cans of black beans to a boil in a medium sized pot on the stove. Carefully pour the beans into a blender, and blend until smooth. Return the blended beans to the pot over medium heat, then strain and add the can of corn. Season with salt and pepper, and add Sriracha to taste if you like it hot. Serve with chunks of avocado.
This makes for a thick, hearty soup - if you prefer something thinner, add a 1/2 cup to a cup of vegetable broth to the blended beans.
